ImageRecipe of the week: For breakfast at home -- inexpensive, delicious and healthy!

1 c. cornmeal

1t. salt
1T. sugar
1 c. boiling water- pour over above ingredients, stir well and let sit 10 minutes

 

Added to bowl, mix-

1 egg
½ c. milk
2T. melted butter (or oil)
1/2c. flour
2 t. baking powder

 

Spoon onto a hot buttered griddle at med.,high heat.

 

Add thin slivers of tart apple to the pancakes and flip when the underside becomes golden brown at the edges.

 

*They also reheat well in the microwave, or are good spread cold with jelly or peanut butter as a snack.
